In short
A Binondo food trip is a walking crawl through Manila’s Chinatown, founded in 1594 and often called the oldest Chinatown in the world. Classic stops include Dong Bei Dumplings, Sincerity for fried chicken, Wai Ying for mami and roast duck, Masuki for mami and siopao, New Po-Heng for fresh lumpia and Eng Bee Tin for hopia. Go early or in the evening, share every plate, and check hours before you go.

The place
Why Binondo.
Binondo was founded in 1594 by the Spanish governor Luis Pérez Dasmariñas as a settlement for Chinese immigrants, across the Pasig River from Intramuros, and it was a hub of Chinese trade even before that. It is widely called the oldest Chinatown in the world. Ongpin Street is its food spine, lined with tea houses, restaurants and stalls, and the historic Binondo Church is its best-known landmark.

The route
The order that works.
- Start savoury and hotDumplings and fried siopao are best eaten the minute they are cooked, so do them first while you are hungry.
- One sit-down noodle stopA bowl of mami at Wai Ying or Masuki is the anchor of the day. Share a plate of roast duck or siopao on the side.
- The fried chickenSincerity’s chicken is the stop people argue about. Order one for the table.
- Something freshFresh lumpia from New Po-Heng is a light break between the rich stops.
- End with the bag to take homeFinish at Eng Bee Tin for hopia and tikoy, so the box does not travel all day.
Pacing
How to do Binondo well.
- Go early or go late. Mornings are calmer; evenings are livelier. Midday heat makes walking between stops slower.
- Share everything. One order per two or three people at each stop leaves room for all seven.
- Carry small cash. Plenty of small shops and stalls prefer it.
- Bring a bag. You will leave with hopia, tikoy or a box of dumplings for later.
- Side streets are part of it. The lanes near Masuki sell kiampong rice, oyster cake, congee and pastries — follow the steam.
- Chinese New Year is peak Binondo. Expect crowds and dragon dances; go very early if you want a seat.
